- 4 large tortillas
- 1 cup crumbled feta cheese
- 2 cups fresh spinach, chopped
- 1 tbsp olive oil or butter
- Optional: 1/2 cup sun-dried tomatoes, chopped
- Optional: 1/2 cup sliced olives
- Optional: 1/2 cup cooked grilled chicken
- Optional: 1/2 cup caramelized onions
Instructions
- Wash and chop the spinach.
- Prepare any optional add-ins.
- Lay a tortilla flat and add spinach, feta, and optional fillings on one half.
- Fold the tortilla in half and press gently.
- Heat a skillet over medium heat with olive oil or butter.
- Cook each quesadilla for 2-3 minutes per side until golden and crispy.
- Remove from skillet and let rest briefly.
- Slice into wedges and serve warm.
