  • 1/2 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 1/2 cups white chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream butter until smooth.
  3. Add brown sugar, granulated sugar, egg, vanilla extract, and pumpkin puree. Mix until smooth.
  4. In a separate bowl, whisk flour, salt, baking soda, cinnamon, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet, stirring gently until just combined.
  6. Fold in white chocolate chips.
  7. Chill dough for 30 minutes.
  8. Scoop dough with a 1½-inch cookie scoop onto prepared baking sheets, spacing slightly apart.
  9. Bake 12–14 minutes, until edges are set and lightly golden.
  10. Cool 1–2 minutes on baking sheet before transferring to wire rack.


Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Chill dough for best texture and shape.
  • For variation, add dried cranberries or chopped pecans.
