Description

These margarita balls are a zesty, no-bake dessert bursting with lime, a hint of tequila, and a sweet-salty finish like a margarita in bite-sized form.


Ingredients

  • 30 cream-filled vanilla sandwich cookies (like Golden Oreos)
  • 2 cups almond flour
  • 1/2 cup white chocolate chips, melted
  • 1/4 cup blanco tequila
  • 1/4 cup orange marmalade
  • 2 tsp lime zest
  • 1 tbsp fresh lime juice
  • 2 tbsp + 1 1/2 tsp lime-flavored gelatin (divided)
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Instructions

  1. Crush the cookies into fine crumbs using a food processor
  2. Transfer crumbs to a bowl and mix with almond flour and melted white chocolate
  3. Stir in tequila, orange marmalade, lime zest, lime juice, and 2 tablespoons gelatin
  4. Mix until a soft dough forms
  5. Scoop about 1 tablespoon of dough and roll into balls
  6. Place balls on a parchment-lined tray
  7. Refrigerate for 10 minutes to firm up
  8. Mix sugar, salt, and remaining gelatin in a small bowl
  9. Roll each ball in the coating mixture
  10. Serve immediately or chill until ready

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months. For a non-alcoholic version, replace tequila with citrus juice.
