- 3 slices bacon, chopped
- 1 lb chicken tenders
- 1/2 tsp ground pepper, divided
- 1/2 tsp salt, divided
- 1/3 cup Greek yogurt (whole milk)
- 1/3 cup mayonnaise
- 2 tbsp fresh dill, chopped
- 1 1/2 tbsp cider vinegar
- 1/2 tsp garlic powder
- 4 cups broccoli (chopped into small pieces)
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup scallions, thinly sliced
Instructions
- Cook chopped bacon in a skillet over medium heat for about 6 minutes until crispy
- Transfer bacon to a paper towel-lined plate
- Season chicken with half the salt and pepper
- Cook chicken in the same skillet for 4–6 minutes per side until fully cooked
- Let chicken rest for 5 minutes, then chop or shred
- In a large bowl, whisk together Greek yogurt, mayonnaise, dill, vinegar, garlic powder, and remaining salt and pepper
- Add broccoli, chicken, and bacon to the bowl
- Toss until evenly coated
- Fold in cheddar cheese and scallions
- Serve immediately or chilled
Notes
Use fresh broccoli for best texture. Let chicken cool slightly before mixing to keep dressing creamy. Store in an airtight container in the fridge for up to 3 days. Best served chilled. Easily adaptable with rotisserie chicken or turkey bacon for convenience.
