Description

A hearty, humble, and cozy soup that tastes like it simmered all day, made quick and easy in the Instant Pot. With rich beef broth, tender potatoes, and savory ground beef, it’s comfort food at its best.


Ingredients

  • 1/2 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 2 celery sticks, chopped
  • 1 pound extra lean ground beef (95% lean)
  • 3 cloves garlic, minced
  • 2 heaping tablespoons tomato paste
  • 1 (28 oz) can diced tomatoes, with juices
  • 4 cups beef broth
  • 2 large Russet potatoes, diced
  • 1/4 teaspoon Italian seasoning (or more to taste)
  • Salt & pepper, to taste

Instructions

  1. Press “Sauté” on the Instant Pot. Add olive oil, onion, and celery. Cook for 4 minutes, stirring occasionally.
  2. Add ground beef and minced garlic. Cook until browned and fragrant, about 5 minutes. Drain fat if desired.
  3. Stir in tomato paste until combined. Add diced tomatoes, beef broth, diced potatoes, and Italian seasoning.
  4. Secure lid, set valve to “Sealing,” and pressure cook on high for 8 minutes.
  5. Quick release the pressure. Open lid carefully, stir, and season with salt and pepper to taste.
  6. Ladle into bowls and serve hot. Enjoy with your favorite bread or salad.


Notes

Dice potatoes evenly for even cooking. Stir tomato paste well for depth. Let sit 5 minutes before serving to thicken naturally. Freeze leftovers in batches for quick lunches. Easily made gluten-free with compliant broth. Swap in turkey, sweet potatoes, or peas for variation.
