Description

  • 1/2 cup mozzarella, shredded
  • 4 oz cream cheese
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1/4 tsp salt (or to taste)

Instructions

  1. Cut chicken breasts into evenly sized bite-sized pieces
  2. Heat olive oil in a large skillet over medium heat
  3. Add chicken and cook for about 5 minutes, stirring occasionally, until fully cooked and lightly golden
  4. Sprinkle in Italian seasoning, salt, and black pepper and stir to coat
  5. Add minced garlic and cook for 1 minute until fragrant
  6. Add broccoli and cherry tomatoes and cook for about 5 minutes until tender-crisp
  7. Add spinach, mozzarella, and cream cheese
  8. Stir gently until cheese melts into a creamy sauce
  9. Cook for another 2 minutes until fully combined
  10. Remove from heat and serve warm


Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 1 month. Reheat gently on the stovetop with a splash of water or broth. Avoid overcooking chicken and add garlic after searing to prevent burning.
