- 1 pound ground beef (93% lean)
- 1/2 cup chopped yellow onion
- 3 cloves garlic, minced
- 28 oz canned diced tomatoes (with juice)
- 3 cups frozen mixed vegetables (corn, peas, carrots, green beans, potatoes)
- 3 cups beef broth or stock
- 15 oz canned tomato sauce
- 2 tsp Italian seasoning
- 1 tsp Beef Better Than Bouillon
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp red pepper flakes
- 1 bay leaf
- 2 tbsp chopped fresh parsley
Instructions
- In a large soup pot over medium heat, cook the ground beef, chopped onion, and minced garlic until browned and cooked through (5–7 minutes). Drain excess fat if needed.
- Add diced tomatoes, frozen vegetables, beef broth, tomato sauce, Italian seasoning, Better Than Bouillon, salt, pepper, garlic powder, onion powder, red pepper flakes, and bay leaf.
- Bring to a gentle boil, then reduce to a simmer. Cook uncovered for 20 minutes, stirring occasionally, until vegetables are tender.
- Remove bay leaf and stir in fresh parsley just before serving.
Notes
Cool completely before storing. Keeps in the fridge for up to 4 days or in the freezer for up to 3 months. Reheat on the stovetop or microwave. Swap in ground turkey, plant-based crumbles, or fresh veggies as desired.
