- 2 tablespoons unsalted butter
- 4 ounces cream cheese
- 1/4 cup heavy whipping cream
- 1 cup shredded cheddar cheese
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 4 low-carb tortillas
- 1 cup sour cream
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1 cup extra cheddar cheese
- 1/4 cup chopped cilantro
- 1/2 cup jalapeño slices (optional)
- 1 tablespoon olive oil
Instructions
- Melt butter in a saucepan over medium heat.
- Add cream cheese and heavy whipping cream and whisk until smooth.
- Stir in shredded cheddar cheese until melted and keep warm.
- Heat a skillet over medium-high heat and cook ground beef, breaking it apart.
- Cook for 5–7 minutes until browned and drain excess fat.
- Stir in taco seasoning and mix well.
- Heat olive oil in another skillet and toast each low-carb tortilla for 1–2 minutes until lightly golden.
- Lay one tortilla flat and add seasoned beef in the center.
- Pour warm cheese sauce over the beef.
- Add sour cream, lettuce, diced tomatoes, and shredded cheddar.
- Fold tortilla edges inward over the filling.
- Place seam-side down in a hot skillet and cook 3–4 minutes per side until crispy.
- Remove from skillet, rest for 1 minute, slice in half, and serve warm with cilantro and jalapeños.
