Description

Right after that first bite of these Crispy Ground Beef Tacos, you’ll hear it  that golden, shattering crunch giving way to juicy, seasoned beef and melted cheese. These oven-baked tacos are bold, minimal fuss, and irresistibly crispy without frying.


Ingredients

  • 1 pound lean ground beef (90%)
  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese, Mexican blend, or Monterey Jack cheese (shredded)
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 450°F and line a baking sheet with parchment paper
  2. Heat a skillet over medium-high heat and brown the ground beef, breaking it apart as it cooks
  3. Drain excess grease if needed
  4. Stir in taco seasoning and enchilada sauce and bring to a gentle simmer
  5. Remove from heat once slightly thickened and well coated
  6. Wrap tortillas in a damp paper towel and microwave 30–60 seconds until pliable
  7. Brush one side of each tortilla lightly with olive oil
  8. Place tortilla oil-side down on baking sheet
  9. Add 2 tablespoons cheese to half of tortilla
  10. Top with 1/4 cup seasoned beef
  11. Add another 2 tablespoons cheese
  12. Fold tortilla over filling
  13. Repeat with remaining tortillas, arranging in a single layer
  14. Bake for 16 minutes until tortillas are golden and crisp and cheese is melted and bubbly
  15. Let cool for 3 minutes before serving


Notes

Use 90% lean beef for best texture. Don’t overfill the tacos to ensure crispiness. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven at 375°F for 8–10 minutes or air fryer at 350°F for 3–4 minutes to keep them crispy.
