Description

A creamy, cozy pasta bake with tender chicken, sautéed mushrooms, and melty mozzarella. This comforting casserole is perfect for chilly nights or family gatherings.


Ingredients

Chicken:
  • 1 large boneless, skinless chicken breast
  • 2 teaspoons Italian seasoning
  • Salt & pepper to taste
  • 2 tablespoons olive oil
Sauce:
  • 2 tablespoons butter
  • 1/4 cup dry white wine (or chicken broth)
  • 8 oz. button mushrooms, diced
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 10.5 oz. cream of chicken soup
  • 10.5 oz. cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 3/4 cup grated Parmesan cheese
  • 1 cup frozen peas
Pasta Bake:
  • 3/4 lb. spaghetti
  • 2 cups shredded mozzarella cheese
  • Fresh parsley, for garnish

Instructions

  1. Slice chicken breast in half lengthwise. Season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large pot over medium-high. Sear chicken 5–6 minutes per side. Let rest, then dice.
  3. Preheat oven to 350°F. In the same pot, melt butter and add wine. Scrape up browned bits and simmer 5 minutes.
  4. Add mushrooms and onions; cook 5 minutes. Stir in garlic and cook 1 more minute.
  5. Reduce heat. Stir in both soups, sour cream, milk, Parmesan, peas, and chicken. Warm gently.
  6. Boil spaghetti in salted water until just al dente. Drain.
  7. Return pasta to pot. Pour sauce over and toss to coat.
  8. Transfer to 9×13″ casserole dish. Top with mozzarella.
  9. Bake uncovered at 350°F for 15 minutes. Then increase to 450°F and bake 10 more minutes until golden and bubbly.
  10. Let rest 5 minutes. Garnish with parsley and serve.


Notes

To save time, use rotisserie chicken or pre-cooked frozen chicken. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the oven at 350°F for 15–20 minutes or in the microwave in 1-minute bursts, adding a splash of milk if needed.
